Mimosas are the go-to brunch cocktail, and this brew-infused version is a modern update that’s super food-friendly. Packed with juicy raspberries and tangy orange juice, it has that fruity edge that goes perfectly with savoury and sweet dishes. Wheat beer gives it the must-have bubbles, plus delicate aromas of citrus and coriander. And will you look at that colour? Don’t save it just for brunches, though — it can be a refreshing sip anytime.

Ingredients

  • 1/4 cup (60 mL) raspberries
  • 3/4 cup (180 mL) orange juice
  • 1 500 mL can wheat beer

Directions

  1. 1. Divide raspberries between 2 glasses (see tips). Using a muddler or the end of a wooden spoon, press berries to break down and release juices.
  2. 2. Divide orange juice over muddled berries in glasses. Top each with half of the wheat beer. Stir gently to combine.

Tips

  • For the most refreshing, coolest cocktails, keep all of the ingredients chilled until right before you mix.
  • Collins glasses that hold around 14 fluid oz are just right for this tall, cool refresher.
