There is a saying 'Keep your beer cold and dark' - it's simple but true! There are two major things that will cause beer to change its flavour - Temperature and Light.

Cold - The Secret to Long Life

Temperature is the first step in maintaining the integrity of your beer. After all, colder temperatures preserve any food product longer and beer is no different. So, one of the key elements is keeping your beer at colder temperatures - this could be anywhere from cellar temperatures to refrigerated temperatures like at The Beer Store. We are proud to deliver a cold experience to our customers.
Darkness is equally as important to maintaining the great taste of beer. A beer stored away from light will keep its flavours longer than one that is exposed to light. Light can react with hops found in beer and create a sulphur-like aroma we have come to know as skunkiness. This chemical reaction is found in green and clear bottles when they are exposed to light. Brown bottles are always best to avoid this - but the best thing to do is put your beer in the cellar or the fridge right away. Skunkiness does not mean your beer has gone bad - it simply is a change in aroma. To avoid this in green and clear bottles, try to buy a sealed case whenever possible.

Helpful hints for caring for your beer when you arrive home:
  • When you take your beer home, make sure you put it in the fridge or in the cellar (provided that the cellar is nice and cool). Changes in temperature are not good for beer - do not let it get warm, then cold, then warm, then cold etc.

  • Serving temperature is equally as important. Lighter tasting beers, like lagers and pilseners need to be served colder because they are designed to be more refreshing. These beers should be served between 2-7ºC. Warmer temperatures will bring out more flavours. Ales, which usually are more robust and flavourful, should be served warmer - anywhere between 5-13ºC

  • The colder beer gets, the less flavour and aroma it has. If it gets below 1ºC, it may feel nice and cold but you could be in for some other issues. Carbon dioxide, when it gets cold, starts to compress and stays in the beer - meaning that you'll get less foam, which means less aroma and you'll get a surprise when the gas expands in your stomach as it warms up.
