Tailgate Chili

Ingredients: 

2 lb regular ground beef

1 lb ground pork

1 lb steak (flank, round, blade, skirt or sirloin) cut into half inch cubes

¼ cup BBQ seasoning

2 tbsp salt

2 tbsp Mexican chili powder

2 tbsp ground cumin

1 tbsp cayenne pepper

1 tbsp mustard powder

1 tbsp oregano

½ lb diced bacon

6 cloves garlic, minced

3 medium yellow onions, diced

3 jalapeno peppers, seeded, diced

½ cup vegetable oil

1 bottle beer

1-2 cups beef stock

1 - 2 cups BBQ Sauce

 

GARNISH

2 cups shredded cheddar cheese

1 cup sour cream

8 slices Texas toast

2 tbsp butter

Directions: 
  1. In a large bowl combine the ground beef, ground pork and diced steak.
  2. In a small bowl combine the BBQ seasoning, salt, chili, cumin, cayenne, mustard and oregano. Pour the spices over meats. Mix thoroughly.
  3. Cover, refrigerate and allow to stand for 1 hour in a large fry pan.
  4. Sauté bacon for 3-5 minutes until bacon is just crispy.
  5. Add garlic, onion and jalapeno pepper. Continue to sauté for 3-5 more minutes, stirring, until onions are tender.
  6. Remove from heat. Strain bacon-onion mixture, reserving excess fat. Set aside in same
    fry pan.
  7. Return the reserve fat and add 2 tbsp of vegetable oil over medium high heat.
  8. Sauté the seasoned meat mixture in 3-4 batches until meat is fully cooked, adding extra oil as necessary using slotted spoon.
  9. Remove cooked meat from pan and transfer to large soup pot.
  10. Add onion mixture to meat. Add beer, beef stock and bring the mixture to a low boil, stirring constantly.
  11. Reduce heat to low, stirring occasionally for 1 hour.
  12. Stir in BBQ sauce and remove from heat, allowing to cool. Refrigerate over night.
  13. Transfer chili to a self-sealing container and pack in a cooler with ice packs to re-heat chili. Transfer to a pot or crock and slowly heat over medium heat, stirring frequently, until hot.

Note: You may wish to add a little beer to the chili to start with as it may be a little thick.
