Ingredients:

4 lbs chicken wings (tips removed and cut into winglets and drumettes)

MARINADE
1 bottle beer
2 cups white vinegar or apple cider vinegar
¼ cup balsamic vinegar
¼ cup Worcestershire Sauce
¼ cup BBQ seasoning
2 tbsp ground black pepper
1 tbsp salt
1 large yellow onion, diced
2 jalapeno chili peppers, finely chopped
2 bay leaves
1 cup BBQ sauce

Directions:

MARINADE DIRECTIONS

  1. Place chicken wing pieces in a large, self-sealing plastic bag.
  2. In a bowl, combine beer, vinegar, balsamic vinegar, Worcestershire sauce, BBQ seasoning, black pepper, salt, onion, jalapeno and bay leaves.
  3. Pour half of the beer/vinegar marinade, close the bag and shake vigorously.
  4. Refrigerate 4-6 hours or overnight. Pour remaining marinade into a self-sealing container and refrigerate. This will be used for basting the wings as they grill.
  5. Preheat grill to medium. Remove wings from bag (discard bag and contents).
  6. Place wings in a barbecue grill basket. Grill chicken wings for 30 minutes, basting with reserved marinade until chicken wings are fully cooked and crispy.
  7. Carefully remove wings from basket and place in a large bowl. Add BBQ sauce and toss well to coat, season with salt to taste, serve immediately with celery and chunky blue cheese dip.
